The latest tasting menu experience (which changes several times a year) opens with a citrus-infused waterfall of dry ice so lavish that your dining partner temporarily disappears from view. Abundant coils of lemony smoke set the scene perfectly for an evening of edible drama and tableside theatrics.

Some of the dishes are placed before you ready to admire and devour, while others are finished gueridon-style (i.e at your table). It lends the evening a consummately entertaining feeling.

New journey

Part theatre, part gastronomic awakening, Studio by Trèsind will leave you feeling as though you didn’t fully know food until now.

Trèsind’s corporate chef, Himanshu Saini, creates an entirely new ‘journey’ every few months, which means you can return and be surprised anew.

Fourteen courses sounds like a lot – and it is, you will leave feeling full – but the portions are sensible enough to make completing the experience manageable, with the hors d’oeuvre designed to be mouthfuls of possibly the most beautiful food you will ever eat.

The scallop dish, for example, comprises two scallops infused with a subtle mustard flavour, each sitting inside its half-shell, the pair dramatically presented on an ice-white bed of coral. A steak is surrounded by five colourful petals – each petal actually an artfully plated pool of sauce; a different flavour for each.

Meanwhile, one of the signature dishes at Trèsind, the khichdi, or kedgeree, gets a dramatic twist, with dozens of spices arranged around a central dish in tiny bowls. These are added in front of your eyes; each mouthful offers up a slightly different flavour thanks to the fusion of flavours.

Joy, delight and laughter are likely to infuse your experience too, as each dish that comes to your table seems to attain even more outrageous heights of creativity.
